Sacy is a very rare, almost extinct grape variety. Céline and Frédéric are very proud and protective of their special plot with 80-year old vines. Harvest takes place in the early morning hours and is done mechanically to preserve the natural freshness of the grapes. Spontaneous fermentation is followed by a malolactic fermentation with the wine allowed to mature on its fine lees for five months. In the nose, the Sacy releases a pleasant scent of white flowers and green apples. The taste is dry and fruity with a crisp, refreshing acidity.
