Céline and Frédéric met when both were working in the estate of Céline’s father, Frédéric as the winery’s head oenologist and Céline in the areas of Marketing and Sales. In 2013, the couple decided to branch out on their own with vineyards in Auxerrois and Chablis. Today, they farm a total of 23 hectares. Located in Préhy, their estate offers a beautiful view of the hillside vineyards of Chablis.

Sacy Côteaux Bourguignons · Profile

Sacy is a very rare, almost extinct grape variety. Céline and Frédéric are very proud and protective of their special plot with 80-year old vines. Harvest takes place in the early morning hours and is done mechanically to preserve the natural freshness of the grapes. Spontaneous fermentation is followed by a malolactic fermentation with the wine allowed to mature on its fine lees for five months. In the nose, the Sacy releases a pleasant scent of white flowers and green apples. The taste is dry and fruity with a crisp, refreshing acidity.

Chablis 1er Cru Vaucoupin · Profile

The Vaucoupin vineyard is located on the south-exposed hill outside the village of Chichée. The combination of Kimmeridgian clay and limestone give this wine the typical, unique character that you can only find in Chardonnay from the top vineyard sites of Chablis. In the nose the wine reveals scents of ripe lemon and clementine with slight hints of yellow plum. The taste is fresh with a crisp acidity that accentuates the elegant roundness and long finish.
