Cantine Spadafora


Calabria is a mountainous region right at the tip of the Italian boot. Until recently, wines were mainly produced for local consumption and have not found their way to export markets. This is one reason why many of the region’s grape varieties are widely unknown. Cantine Spadafora  was founded in 1915 by Ippolito Spadafora. Now operated by the fourth generation, the family focuses on producing wines solely from grapes grown on their own vineyards in the Terre di Cosenza DOP. All the work in the vineyard is governed by the total respect for nature and for maintaining the ecological biodiversity of the land. Everything is done manually. The care taken in the vineyards is matched by gentle wine making practices in facilities that were modernized throughout the last years. The result are flavorful wines that express the character of their terroir.


Altopiano Bianco Terre di Cosenza Greco · Profile

After manually harvesting the grapes, they are gently pressed and then the must is immediately removed from the skins to retain the natural elegant fruity character of the Greco. The temperature controlled fermentation in stainless steel vats follows after which the wine gets to rest in stainless steel tanks for about six months. It has a typical yellow colour with green reflections. The aromas are intense with notes of pineapple and banana against a floral background. The taste is fresh with a crisp acidity.

Well chilled it serves as a refreshing aperitif. It pairs well with Mediterranean seafood and fish dishes such as grilled swordfish, anchovies, and fritto misto di mare.

Altopiano Rosso Terre di Cosenza Magliocco · Profile

Magliocco is one of the many ancient, indigenous grape variety of the region. The vines are grown on hillside vineyards between 400 and 500 meters above sea level. The colour is of intense ruby with violet reflections. In the nose intense aromas of cherry and blackberry with hints of licorice and cinnamon. The taste is very elegant and refined with soft tannins. A very well balanced wine.

A great match for charcuterie boards, especially when they feature Calabrian Sopressata and regional Pecorino. Goes well with flavourful vegetable dishes such as ratatouille and fried meatballs.

Solenero Calabria IGP Magliocco & Merlot · Profile

A beautiful blend of the local Magliocco grape and the internationally known Merlot. Te fermenation is temperature controlled with an extended maceration period to extract colour and freshness. The resulting aroma is a pleasant combination of cherries, currant, and raspberry. The taste is fresh with soft tannins leading into an elegant and delicate finish.

Solenero Calabria IGP Magliocco & Merlot · Pairing

It is an easy red wine to drink on its own, but is also very enjoyable with fish and seafood dishes such as sashimi and sushi, fried calamari and Calabrese salami.

Nerello Calabria IGP · Profile

The Nerello Calabrese (known as Nero d’Avola in Sicily) is blended with Greco Nero to craft this well-balanced, elegant yet powerful red wine. The grapes come from a vineyard in Donnici in the southern part of Cosenza. They produce a rich red wine with an intense, deep red colour with reflections of ruby and garnet. A maturation period in barrique adds notes of cacoa to the aromas of red berries and licorice. It has firm tannins that will soften with time, resulting in a wine of great personality, elegant and refined.

Nerello Calabria IGP · Pairing

This refined wine goes well with a variety of dishes, ranging from pasta with meat sauce, roasted lamb, braised beef, and venison.

1915 Terre di Cosenza IGP · Profile

This well crafted blend of Magliocco, Greco Nero, and Malvasia is produced on the basis of the apassimento method for Amarone, whereby the grapes will rest on drying racks for a few weeks to allow some of the natural water to evaporate. It is a truly great wine, often used to simply relax or meditate. With wines of this nature, food pairings are totally subjective and never wrong. We like this wine with risotto prepared with 1915 and lamb osso bucco.
